In Morocco’s changing fast-food landscape, concepts built around local cuisine are gaining ground alongside international chains. Beldi Fusion Kitchen is positioning itself within this trend by giving traditional Moroccan dishes a contemporary format aimed at urban, digitally connected customers.
Founded in Marrakech, the brand initially built a local network of five outlets. Its concept revolves around reworking Moroccan culinary staples, including tagines, couscous, tanjia and briouates, for modern dining formats suited to changing consumer habits.
After consolidating its presence in Marrakech, the company began expanding into other regions, opening two outlets in Agadir and establishing its first location in Casablanca.

The brand is now looking to accelerate its national rollout. According to its management, new locations are being prepared in Casablanca, while an entry into Tangier is also planned.
The growth of brands like Beldi Fusion Kitchen reflects a wider trend in Morocco’s restaurant sector: the rise of “modern beldi” dining. The approach combines traditional recipes and Moroccan hospitality with contemporary operational standards, including a consistent visual identity, layouts designed for busy urban areas and an offering intended to appeal to different generations.
